CYPRIOT SNACK TO DIE FOR!

Hope Jim will leave this in the General Discussion Forum for a few days, as this heavenly dish needs to be shared with everyone :)

We first came across this very simple snack a few years ago at the restaurant which forms part of the Oleastro Olive Park in Anogyra. Weirdly, we've never seen it anywhere since...but it is now established as a family favourite. Try it once and you'll want it time and time again; perfect for summer snacks out in the garden. Healthy too! Main pic above shows the finished dish, and the smaller pics underneath the preparation process. You'll need:

Nice large ripe tomatoes, sliced
Village bread (nothing else works as well), sliced
Extra-Virgin Olive Oil
Feta Cheese (sliced. Not easy, but just do the best you can)
Oregano (the freshest you can find)

To prepare:

Add a dash of olive oil to the frying pan. Place the sliced tomatoes all the way around the frying pan, on a medium heat. After a while, turn the slices over. Sprinkle liberally with oregano and continue cooking for a few more minutes.

In the meantime drop the village bread in the toaster on a low setting. You want to firm up the bread, but WITHOUT toasting it or allowing it to go crisp. Once done, place the bread on a plate and drizzle fairly liberally with olive oil (remember, olive oil is good for the heart :) )

When the tomatoes are cooked place them evenly all over the bread.

Place the sliced Feta cheese evenly over the tomatoes. Lightly drizzle with olive oil (remember, it is good for you =)) ), then sprinkle all over with more fresh oregano.

Mmmm that looks so good I'm just off to Sainsbury's to buy some feta, shame I can't get village bread but hopefully it will work with Irish soda bread.

Fried/griddled halloumi, lountza, slices of big tomatoes and cucumber, and a squeeze of lemon juice. Mayo, if you must.

Love halloumi and lountza too CF, but this has the edge as a snack meal IMO :)

Mmmm sounds delicious. This is also rather good. Slice some spring onions and chillies, fry in a little olive oil . Add a slab of feta to the pan and heat through, sprinkle with chopped coriander or parsley .. Spread on toasted pitta, village bread or that wonderful ciabatta from Philipos. If you're not bothered about the calories put another slice of bread on top and squash it together! Yummy.

or

pour tin of chopped tomatoes in frying pan add a dash of lee and perrins[optional] sprinkle of oregano[optional] bring to boil,then turn down to simmer then crack four eggs around mix.sprinkle either grated feta or cheddar over top season with salt and pepper,cover cook for 3 mins [ depending how you like eggs]

serve with buttered bread

I layer tomatoes, feta and origano in an oven proof dish, drizzle with olive oil, and cook, lovely with crusty bread.

Don't agree, AR. The delight of this meal is it's utter simplicity. It combines the subtle flavours of village bread, tomatoes, olive oil, Feta and (less-subtle) oregano. It doesn't need "messing with" or adding to.

And a side of fries (Actifry or otherwise) completely misses the point. Just eat it and enjoy it for what it is :)

Looks & sounds delicious. I'm definitely going to try it but I think I would rub some garlic on the bread once it's been oiled,like bruschetta, & then add a glass of red wine! Remember it's all good for the heart!! :)

Used soda bread , sadly village bread not on sale in Sainsbury's, but followed Lloyds instructions and it was gorgeous.

My wife's coming over to Willingham next week Maggi. She would have brought some village bread over for you, but alas I do do think it would survive the journey and still be fresh :) We freeze ours as soon as we buy it, then use one slice at a time.

Aww thank you anyway Lloyd. It is beautiful here in Cambridgeshire today and the sun is set to stay all week 8) so hope your wife enjoys her stay.

Tried this recipie last night and even with only dried oregano (from Cyprus not the rubbish we get in the UK), it still tasted wonderful.

Might try Ageing Rocker's idea of the basil pesto on the bread and using fresh basil rather than oregano to garnish............

Sorry Lloyd - I do not wish to mess with your faultless original - just curious to see if this would be anywhere near as good.

Nutella and a light smear of chilli jam. Mmmmm.

Rubbish Mark, you may not go for Marmite many of us do..the old advert said your either love it or hate it, I'm certainly in the must have bracket, just having it now in fact on toast, brill!! hate sweet stuff for brecy! James..marmited.

Just tried this (sitting in the garden in lovely UK sunshine I might add!) I varied it slightly by adding garlic to the olive oil and using basil instead of oregano. I also spooned out some of the olive oil from the pan (with aforementioned garlic and herbs in) to drizzle over the bread rather than pouring more from the bottle (Sainsbury's finest bloomer, which was the best substitute I could manage) but it went down a treat with both myself and my mum (my guinea pig today!) The even better news I that there's exactly half of everything left so it looks like I'm going to have to use it up tomorrow...... :D
