

We first came across this very simple snack a few years ago at the restaurant which forms part of the Oleastro Olive Park in Anogyra. Weirdly, we've never seen it anywhere since...but it is now established as a family favourite. Try it once and you'll want it time and time again; perfect for summer snacks out in the garden. Healthy too! Main pic above shows the finished dish, and the smaller pics underneath the preparation process. You'll need:
Nice large ripe tomatoes, sliced
Village bread (nothing else works as well), sliced
Extra-Virgin Olive Oil
Feta Cheese (sliced. Not easy, but just do the best you can)
Oregano (the freshest you can find)
To prepare:

Add a dash of olive oil to the frying pan. Place the sliced tomatoes all the way around the frying pan, on a medium heat. After a while, turn the slices over. Sprinkle liberally with oregano and continue cooking for a few more minutes.

In the meantime drop the village bread in the toaster on a low setting. You want to firm up the bread, but WITHOUT toasting it or allowing it to go crisp. Once done, place the bread on a plate and drizzle fairly liberally with olive oil (remember, olive oil is good for the heart


When the tomatoes are cooked place them evenly all over the bread.

Place the sliced Feta cheese evenly over the tomatoes. Lightly drizzle with olive oil (remember, it is good for you
