Scrummy EASY dessert - 3 ingredients

Fragrant lemon posset
Only three ingredients to make this creamy, lemony pud

RECIPE DETAILS
• Servings:4
• Prep time:15min
• Cook time:1min
• Dish type:Puddings & Desserts
• Difficulty:Quick & Easy
Ingredients
600ml double cream
150g caster sugar
2 large lemons, zest and juice
Preparation
1. Place the double cream and the sugar into a large pan over a low heat and bring to the boil slowly.
2. Boil for 3 mins, then remove from the heat and allow to cool for 10 mins.
3. Add lemon juice and zest - whisk well.
4. Pour the lemon cream mixture into 6 martin glasses and refrigerate for three hours then serve.

This looks good but does it need an electric whisk(as I don't own one) or could it be done using a hand whisk? How would I know when it was whisked enough? :oops:

You could use a hand whisk. Using a fork would be hard work!

I just guessed, to be honest: when it started to thinken I transferred it to glass bowls and bunged them in the fridge where it solidified.
