Hmm Delicous Cyprus Sausage

Hi I'm back in the UK now, but when in Paphos bought some delicouse sausage at Papantoniou (opposite Debenhams)

Can anyone tell tell me anything about them ie; ingredients, spices, what the skins are made of.

They are:
Beef Pastournas :D mmm delicouse

and Loukanika Xoriatika second favourite.

As I cook alot would love to have a go at making my own. What a shame they aren't available in the UK.

Well, firstly, Traditional Pastourmas are not made from beef. They're made from Camel meat ( ask any knowledgeable Cypriot ) and spices. Mainly Cumin, Coriander, cinnamon and some contain Sumac. ( Eastern sausage) first introduced into Cyprus by the Armenians, but are believed to originate from Egypt.

Loukanika are made mainly from pork that has been aged in wine with coriander and a bit of cinnamon thrown in. Sausage skins in Cyprus are usually from the animal, but in UK, synthetic ones can be easily purchased. Have a go! Experiment. hope the info helps. Oh and I miss the fish and chips in Northenden opposite the Church Inn and the Tai loy Chinese. Was there last month.

Actually Loukanika is available in the uk from a number of outlets, i have used this one online and they have a good service, a number of other items you may be interested in too.

Have you any idea just how many Cypriots live in the UK? all Cyprus delicacies will be available in most UK towns I would think, ask at any chip shop :lol:

The ones I like have Chili added and are made from Pork, not Camel meat :D very rare here I would think, but sounds interesting, try this site.
