Bananas!

Hi everyone,

I need some ideas! We always seem to have a good few bananas left over every week that are a bit too ripe for eating and I hate throwing them out!

Any suggestions as to what I could make with them?

I was thinking of something like a banana cake but don't know where to start. I'm not the greatest at baking but I'm very willing to have a go!

Ooh banana bread's delicious and tastes better as it gets a few days old - if it lasts that long!

Google it for a recipe, sorry don't have one to hand and can't quite remember the quantities but it really is delish and the older the bananas the better!

If you've got a freezer, you can peel them, put individually in a ploythene bag and freeze them.

Then eat when you want them, as you would an ice lolly or ice cream.
Tasty, healthy and avoids the waste!

16 oz plain flour
2 tsp baking powder
1/2 tsp bicarb
pinch salt
4 oz butter, softened
7 oz sugar
2 eggs
3 very ripe bananas, mashed with a dash of water
1 tsp vanilla extract ( I mean extract, not that awful essence!)
chopped walnuts (about half a small bag)

Grease a 9x5x3" loaf tin ( or use non stick). Sift flour, baking powder & bicarb. Cream butter & sugar, add eggs, beating well. Mix in bananas & vanilla. Stir in flour mixture & walnuts. Bake in 190c oven for about 35 minutes.

Gorgeous sliced and spread with butter, mmmm!. You can also use mixture to make 12 large muffins instead of a loaf.

I use a similar sounding recipe but replace the walnuts with sultanas sometimes.

This one is yummy - saw it on telly the other night and had to try. I used brandy instead though as I don't like tequila!
