Strawbery Jam That Never Fails.

Postby Charnwood Blue » 02 May 2012 11:10

I have always found that it as notoriously hard to get a good set when making Strawberry jam. I now use the following method and you are guaranteed to have a well set jam.

1 KG Strawberry’s

1KG Sugar.

4 lemons.

1Pint water

Cut each lemons into 8 pieces, put into pan with the water simmer for 25 -30 mins. Squash out juice throw away the peel. Add the 1 KG Strawberry’s and boil slowly for 15 minutes.
Add the 1KG Sugar and rapid boil for 15 minutes.
Tests for set.
When you the jam as set point put into sterilised jars and seal.

This is an excellent recipe Even though I was sure I had cocked it up by over simmering the lemons in water and being left with virtually no liquid after 40 mins I just added a little water and squashed everything through a sieve before going onto adding the strawberries Very good and easy recipe

I got 2 good sized perserving jars full label is off them so no idea what size they are but looking at them and guessing I think you would get between 5 and 6 jars the size normal shop bought ones would come in
