Ingredients:
500g mixed dried fruit
1 cup fruit juice
1 cup self raising flour
1 egg
Put 500g of mixed fruit in a bowl with the 1 cup of fruit juice, leave overnight to soak.
Next day, Line a baking tin with greaseproof paper (approx 8x10 inch, 1in deep)
Add 1 cup of self raising flour and 1 egg to the bowl of soaked fruit.
Mix well and place mixture in the lined baking tray.
Bake in moderate oven (180 deg) for 35 to 45 minutes.
Remove and cool when golden brown and firm to touch.
