MANGO CHUTNEY (GINGER)
4.2 Kg ripe Mangos ( Chop coarsely)
340 Grams Raisins
3 Tablespoons full of grated fresh Ginger.
2 teaspoons coarse cooking Salt.
6 cloves Garlic. Crushed
2 Red Chillies, finely chopped
375 ml Malt Vinegar
1.2 kg sugar.
( I also use Chilli flakes, add to your taste.)
Combine ingredients in large saucepan; stir over heat, without boiling, until sugar dissolves.
Simmer covered for 10 minutes.
Remove lid, simmer about 20 minutes till mixture thickens.
Place hot chutney into sterilised jars.
This amount makes approx 1.5 litres
