All you need is:
Halloumi, cubed
Greek bread (or bagel type greek bread in a ring shape), cut into small cubes.
Watermelon, cut into chunks
iceberg lettuce,
rocket,
pine nuts (if you like)
sweet balsamic vingear
1. Brown the halloumi slightly on a griddle, using no oil and also the bread (croutons)
2. Place iceberg lettuce and rocket into a salad bowl
3. Add watermelon and halloumi
4. Give it a stir
5. Place croutons on top last (otherwise they will absorb watermelon juice and go soggy)
6. Lastly, drizzle over balsamic vinegar
