roast potatoes

Hi

When i eat out in a restaurant or hotel the roast potatoes are lovely, does anyone know how they achieve this, or the best way to cook them, as they always turn out a bit odd when i roast them, i boil for around 5 - 10 mins first then drain and cover in oil and bung em in the oven till they look done! guessing this isnt the best way??

I par boil mine, drain then put back into pan and give it a shake to rough them up. I have a tin with some oil in oven so its nice and hot first, add potatoes and baste with hot fat. I use a mix of lard and oil and get perfect results every time, ncie n crispy n gorgeous!

yes, fine cook them first as you are doing, then drain thoroughly, rough the outsides up, and either dredge in flour or - would you believe semolina!!!, heat some oil in a tray, and cook potatoes in the oven on high approx 200 degrees. Whe crisp and ready to serve, sprinkle with some sea salt and pepper - yummy
Goose fat works very very well instead of oil, some of the "delis" in Paphos have goose fat

There has been an absence of frozen roast pots from the Peyia and other area supermarkets recently. Anyone know where you can buy them. Suggestion was that Aunt Bessie's importer in Cyprus has either gone bust or not paid the bill. Not even any other makes. Anyone brought any recently and from where? Thanks.
