Anyone using this in this configuration?

Wondering whether the picture is any better/more stable than streaming from an iPad/iPod/iPhone?

Yes I use an ATV2 with XBMC installed and run both Filmon and TV Catchup. I do not see any noticeable difference with any of the viewing methods when air playing. I do see a difference when using a Raspberry pi with XBMC installed as that is 1080 and the Apple Tv2 is 720.
For what its worth I prefer to use an ethernet connection rather than wifi signal.

I too use a jb ATV2. For me TVCatchup seems to be slightly better image quality but there is little in it. Using BBC iPlayer gets better quality I feel but the live streams are difficult to receive - at the moment I can only get BBC1 - but the catchup is fine, as is ITV.
Best of the lot though is the BBC iPlayer app on my smart Samsung TV. The quality of this is superb. FWIW, I use a smart DNS, UnoTelly.com. Great service!

I have tried to jailbreak my Apple TV 2 but struggling, is their anyone who can help me, I am going back to UK next month but want to have it done here before I go, I can get it done for £25 in UK, can anyone give me a price here, been told should only take about 40 mins.

The jailbreak itself is free.
The going price over here is around about €35 to €40 for a jailbreak and then install of XBMC which is the media centre used on the device itself .

Could someone advise how to get,add on catch-up TV! Ie I-player, 4OD, etc on this. Have film on and working fine but would love the extra facility. Thanks in advance

Once installed, you need to download the add-ons for BBC iPlayer, ITVplayer, 4oD and anything else you might be interested in, sport for example. AFAIK, Demand5 doesn't work because of DRM issues but I'm happy to be corrected.
As ATV2 does not permit direct connection to a VPN, you need to use a SmartDNS (or perhaps a DD-WRT router). I use UnoTelly with good results http://www.unotelly.com/unodns/
